can anyone explain, or point me to a document/discussion, which would tell me why i would want one over the other. in other words, when do you use a site and when do you use a page?

Sites are large containers or 'buckets' for content. The contain lists and libraries, of which there might be a library containing pages. In addition sites have the ability to structure information through metadata and have collaboration/communication systems built within them.
A page is a webpage. Period. It is an ASP page that might contain some web parts. The page is basically used to display information, just like on any web site.
