Is there any documentation on how to create a star rating in SharePoint 2007 list?

As far as I know, there is no such documentation.

For simple display, you can use jQuery plugins.

If you want to allow your users to vote, it'll be more complicated, as you'll need to process the rating.

I'm not sure how it's put together, but it should give you a start.

Matt, I think the question is about creating a star rating for items in a list, not just one rating for the whole site. It means that it's not just about capturing the click, you also need to grab the item id.
