I think meeting workspaces are disastrous pitfalls! Every single meeting workspace I have created/linked through Outlook has given me nothing but headaches! Your very problem has plagued me since our change to SP07 and the use and discovery of meeting workspaces.
To salvage the few meeting workspaces that I felt were worth saving, I made a template of the site and saved the content. Then I created the meeting date on a Sharepoint calendar and relinked the site (the one templated site has been plagued me with quirky problems since.) Mind you, if you've read at all, you'll find that once that meeting is cancelled through Outlook, you can't link a recurring meeting to it again. So what if the originator leaves the organization? To me that is a huge flaw in the design - IMO - DON'T create or link recurring meetings with Outlook. If you must, use a Sharepoint calendar. I would hope that is fixed in 2010.
The other huge headache with these workspaces is that when the lists or libraries are set up to be non-series items, they create a folder for each date. Oh yeah, the display is really cool -- but wait until that link gets broken and you have the responsibility of pulling all that information from the site! I hate folders!
Having said that, I do have at least one meeting workspace that I utilize for meetings with administrators so that I can record an agenda and provide quick links to visuals. But I'm in charge of it and as a non-recurring meeting site it works perfectly.
In theory meeting workspaces linked through Outlook are awesome. In reality, even for the sophisticated user, there are just too many potential problems. My recommendation would be to convert all the information to a team site or another meeting workspace, but with the intent of not linking it to anything. Use creative filter views to make the site more user friendly.
